Meet the Chef

Masayuki Asakawa is the owner chef of Daily Zen Bento. In the past, he has been appointed as the GM chef and wine specialist of a French restaurant, “Villa Al Mare,” which sat next to a bay in Yokohama, and has transformed the restaurant into a famous local venue by hosting dinner shows, wine party, table manner classes, comedy dinner show, as well as opening up food stalls at local fireworks events.

From then on, Masa has left his home country for United States to help his client launch a restaurant in a hotel. Although this restaurant has never materialized due to restaurant permit issues, Masa has begun working in the Napa/St. Helena region starting at “Terra” restaurant, and later as a chef of the fish section of a French restaurant at Meadow Wood Resort. Since then, he has been headhunted by Sushi Ran of Sausalito, and has created the foundation for the current formation of Sushi Ran.

Later on, Masa has been approached by Executive Chef Kawai from Tokyu Pacific Hotel, which no longer exists, to be the next Executive Chef, but has declined the offer as he has already started launching his new restaurant venture.

A year later, his new Japanese French fusion restaurant called “Bistro Shun” went live, which offered best wines in his wine cellar, which included rare wines such as the 1982 Château Margaux, Montrachet, and etc. He has always made whatever the customer wanted to eat, regardless of whether it was on the menu.

Bistro Shun has grown into a popular hotspot, especially among the Japanese community, as well as for clients from Japanese companies, and thrill-seeking foodies from all walks of life, and has been selected as the #1 Japanese restaurant every year by the “Diablo Magazine.”

Fast forward ten years, Masa has switched focus and his new goal is now to “provide healthy meals so that people can eat nutritious, healthy food at least once a day,” and has since then launched Daily Zen bento, which he makes wholeheartedly while being attentive to detail from presentation to its seasoning.
